Tomato, Blue Cheese & Grilled Bread Salad

1/3 cup + 3 T olive oil
5 large garlic cloves, minced
6 large 1-inch thick slices (about 5 X 3 inches) day bread
3 T Tangerine & Fig Balsamic vinegar
2 lbs cherry tomatoes, cut in half
1 medium red onion, thinly sliced
6 oz blue cheese, crumbled, room temperature

Combine 1/3 cup olive oil and 3 garlic cloves in a small bowl. Let stand 30 minutes at room temperature or refrigerate overnight.

Brush bread on both sides with garlic oil. Place on a rack over a cookie sheet and put under the broiler. Toast it until crisp and golden on one side and then turn over and toast until golden. Cool and then cut into 1-inch cubes.

Combine vinegar, 3 T olive oil and 2 minced garlic cloves in a large bowl. Season generously with salt and pepper. Add tomatoes and onion. Let stand 30 minutes. Toss before serving.
