Affairs of the Vine will present a "Food & Wine Pairing Workshop" for your group. Affairs of the Vine educators will discuss and demonstrate the "secrets" in selecting the perfect wines to complement the flavors of a meal. The flavors so prevalent in today's restaurants featuring "fusion and ethnic" cuisine present a unique challenge in selecting wines. The seminar will be interactive and concentrate on varietal wines. In this workshop, your group will be divided into teams. The teams will taste eight different wines in the company of a variety of flavors and textures. The teams will be presented the challenge of tasting and describing what happens to wines as they are paired with different foods. Each of the participants will discover which wines complement the flavors in food and why. The team members will be asked to note and discuss their observations and experience.
This workshop will enable your group to develop the ability to
taste the differences in wine and apply them to food pairing
experiences. The attendees will learn to communicate food and

Affairs of the Vine will present a "Wine Blending Workshop" as a team building effort for your group. In this workshop, your guests will be divided into teams. Each of the teams will be advanced into the ranks of winemakers as they experience firsthand, the joys and frustrations of winemaking. Utilizing selected varietals, each team will reach a consensus on a wine blend that they feel is the best after working as a group through various options. Each member of the team will take home a 375-ml bottle of the wine blend selected by his team with a customized label and signatures by the winemaking team to commemorate the experience.
This workshop will stimulate interaction, sharpen negotiating skills, improve team communication, and foster team cooperation and collaboration while having fun together.

The teams will be presented the challenge of tasting and describing wines when they are tasted alone and then with four different appetizers. Six international wines will be presented. Affairs of the Vine educators will discuss and demonstrate food and wine pairing guidelines. Your group will have the opportunity to experience the changes in the food and wine with each pairing. Each participant will be asked to note and discuss their observations, indicating excellent, good, fair, and poor pairings. The participants will then be required to compile their observations and present them as a team. This workshop will build on the skills your group has developed in the "Food & Wine Pairing Workshop" and the "Aromatic Workshop" or from previous wine knowledge and experience.
